
Perfect White Rice
(From "My Students' Favorite Chinese Recipes - Updated Edition")
Makes 6 cups.
Ingredients:
2 cups long or short grain white rice
Steps:
- Place rice in a 2 or 3-quart saucepan. Rinse until water runs clear.
- With index finger touching the SURFACE of the rice, add cold water to reach the first joint of the index finger (about 7/8").
- Cook uncovered, using high heat, until most of the water has been absorbed and little craters begin to form on the surface of the rice (do not stir and do not lower the heat during this cooking period). At this point, reduce heat to a simmer.
- Cover saucepan and simmer rice for 15 minutes. DO NOT peek during this simmering period. At the end of 15 minutes, fluff rice and serve. If not serving at once, cover saucepan after fluffing and leave on warm range until ready to use.
